GRAINS

Ancient varieties

Our grains are grown with natural processes, without the use of chemical fertilisers.  


Our mission is to find varieties with ancient genetics that are rich in nutrients, are more favourable for the human body than the widespread, genetically bleak varieties used by industrialised agriculture. Those more colourful, ancient varieties are also more robust and adapt more easily to environmental changes. Their yields are much lower but they never exploit the land. 


We are extremely grateful that we can grow the special types of grains of Királybúza (Kingwheat) and Bácska spelt bred by Frigyes Varga, within a few kilometers radius from their birthplace and with techniques developed together with the breeder. 


We also grow barley, millet, rye, oats and corn.

FLOUR

Stone ground, whole grain

Our grains are milled by stones, turning slowly not to heat up the flour, not to ruin their precious nutrients. This way most of the immense life-force of the seed is maintained.   


Stone ground flour is always whole grain, since the mill is fed by the whole seeds. During grinding the oils of the germ coat the flour particles, and together with minerals, vitamins and enzymes they stay in the flour - even after sifting - in their natural proportions.  

If we need lighter, finer - i.e. less coarse - flour we sift it to separate the coarser particles of bran and semolina. 


Fresh stoneground flours are velvety and aromatic, it is a pleasure to touch them, to work with them. Skilful hands can transform them into unforgettable bread and pastry.

OIL

100% sunflower

Our cold-pressed sunfloweroil is also made by seeds produced on the farm, but the process in done in a small oil-mill in Kecskemét. No heating or chemicals are used, as opposed to currently widespread industrial oil making practices, they of course yield higher but the quality of non-cold pressed oil just does not compare.

Our sunflower oil is silky with a very intense flavor. Adds some sunshine to salads, while in the soup cooked with it you can only feel its softness. Great for frying too, no splatter, but brings out the aroma of the food. Besides, it smells lovely.
